A delightful fusion of sweet and savoury, bringing together the rich and unique flavours of honey and the tartness of juicy cranberries resulting in a mouthwatering and captivating centrepiece for your festive table.
In a saucepan over medium heat, combine the Beechworth Honey, cranberry sauce, dried cranberries, brown sugar, Dijon mustard, apple cider vinegar, ground ginger, ground cinnamon, ground cloves, and black pepper. Stir well and simmer for about 10-15 minutes until the glaze thickens.
While the glaze is simmering, score the surface of the ham to create crosshatch shapes with a sharp knife.
Brush about half of the honey & cranberry glaze over the surface of the ham. Roast the ham in the preheated oven covered in foil for 1 hour.
Increase oven temperature to 200°C. Uncover the ham, baste with glaze and bake for a further 40 minutes, continue glazing the ham every 10 minutes. Rest for 10 minutes and serve.
