Beechworth Honey & Cranberry Christmas Ham

Ingredients

  • 1 Tibaldi Australian Half Ham on the Bone
  • 1 cup Beechworth Honey Traditional Honey
  • 1/2 cup cranberry sauce
  • 2 tbsp dried cranberries
  • 1/4 cup brown sugar
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp black pepper

Instructions

  • Preheat your oven to 180°C.
  • In a saucepan over medium heat, combine the Beechworth Honey, cranberry sauce, dried cranberries, brown sugar, Dijon mustard, apple cider vinegar, ground ginger, ground cinnamon, ground cloves, and black pepper. Stir well and simmer for about 10-15 minutes until the glaze thickens.
  • While the glaze is simmering, score the surface of the ham to create crosshatch shapes with a sharp knife.
  • Brush about half of the honey & cranberry glaze over the surface of the ham. Roast the ham in the preheated oven covered in foil for 1 hour.
  • Increase oven temperature to 200°C. Uncover the ham, baste with glaze and bake for a further 40 minutes, continue glazing the ham every 10 minutes. Rest for 10 minutes and serve.
