Honey, Cranberry & Almond Cookies with Festive Spices
Honey drops of cranberry goodness, these Christmas cookies make the perfect gift. Spices of nutmeg and cinnamon give a festive cheer!
Ingredients
- 120 g unsalted butter
- 1/2 cup Beechworth Honey Traditional Honey
- 1 tsp vanilla extract
- 2 1/4 cups plain flour
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 150 g dried cranberries (finely chopped)
- 1/2 cup almonds (finely chopped)
Instructions
- Preheat oven to 190°C.
- Cube butter and place it in a pot on medium heat until it begins to boil. Remove from heat and add the melted butter to a large mixing bowl.
- Add honey and vanilla to the warm butter. Use a whisk to mix until the honey has melted.
- Add the flour, baking soda, cinnamon, nutmeg, and ground ginger to the warm butter mixture.
- Add the chopped almonds to the mixture along with the dried cranberries. Mix the batter until all ingredients are combined.
- Scoop approximately 1 tablespoon of batter and hand roll into a ball. Place the cookies on a baking tray and use a fork to flatten them slightly. Bake for 10-15 minutes until golden brown. Remove from the oven and allow to cool.
- Note: Cookies will be soft when they first come out of the oven. They will firm up as they cool.
