Honey, Cranberry & Almond Cookies with Festive Spices

Honey, Cranberry & Almond Cookies with Festive Spices

  • 120 g unsalted butter
  • 1/2 cup Beechworth Honey Traditional Honey
  • 1 tsp vanilla extract
  • 2 1/4 cups plain flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 150 g dried cranberries (finely chopped)
  • 1/2 cup almonds (finely chopped)


  • Preheat oven to 190°C.
  • Cube butter and place it in a pot on medium heat until it begins to boil. Remove from heat and add the melted butter to a large mixing bowl.
  • Add honey and vanilla to the warm butter. Use a whisk to mix until the honey has melted.
  • Add the flour, baking soda, cinnamon, nutmeg, and ground ginger to the warm butter mixture.
  • Add the chopped almonds to the mixture along with the dried cranberries. Mix the batter until all ingredients are combined.
  • Scoop approximately 1 tablespoon of batter and hand roll into a ball. Place the cookies on a baking tray and use a fork to flatten them slightly. Bake for 10-15 minutes until golden brown. Remove from the oven and allow to cool.
  • Note: Cookies will be soft when they first come out of the oven. They will firm up as they cool.
