This honey can crystallise quickly. Grey gum is a rare honey because it grows in a highly selected topography and climate and is an unreliable producer of nectar.

Botanical Information
Grey Gum (Eucalyptus punctata) grow in poor soils on low hills and ridges. It is usually a medium sized tree but depending on growing conditions can reach heights of up to 30 metres. It sheds its bark annually exposing newly formed bark in shades of cream to pinky orange which fade to slatey grey with age.
