Yellow Box Honey
Yellow Box Honey is extra light amber to pale amber in colour has been the most popular single varietal honey in Australia for more than 100 years. It is mild, fresh and fruity with a beeswax flavour. A smooth and clear flowing honey that does not usually crystallise.
Yellow Box (Eucalyptus melliodora) has been a reliable honey producer for many years but is becoming less prevalent due to agricultural pressures from early land clearing. It can flower between October and January depending on its location. It is a medium sized woodland tree that tolerates winter frosts and hot and humid summers.
Yellow Box trees are primarily found on farm land, with one of the widest distributions second only to River Red Gum. It can be found across western Victoria, New South Wales and up to south-central Queensland.
