Chai & Honey Tea Cake with Bee Creamy Honey & Ginger Icing

Our Chai & Honey Tea Cake with Creamed Honey & Ginger Icing combines those glorious chai spice flavours of cinnamon, nutmeg and cardamom into a soft and moist cake perfectly balanced with the sweet buttery flavour of Beechworth Honey. It's almost too good! We then finish this tea cake with a hit of ginger from our Bee Creamy Honey & Ginger which brings out more of the spice flavours adding that extra little oomph and something very special!

Ingredients

  • 600 ml milk
  • 3 chai tea bags
  • 250 g unsalted butter (softened)
  • 240g Beechworth Honey
  • 100 g caster sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 500 5 self-raising flour
  • 150 g Bee Creamy Honey & Ginger
  • 100 g unsalted butter (softened)
  • 1/2 cup walnuts (roughly chopped)

Instructions

  • Preheat the oven to 180°C. Grease and line a 20 cm-diameter cake tin with baking paper.
  • Simmer the milk and chai over a low-medium heat for 10 minutes. Strain the milk, while pushing down on the chai to extract the flavour. Add the honey to the strained hot spiced milk, stirring to dissolve the honey. Set aside in the fridge to completely cool.
  • Cream the softened butter, sugar and vanilla with an electric mixer until pale and fluffy.
  • Add the eggs, one at a time, beating each until incorporated before adding the next.
  • Next add half the flour and half the milk, beating until combined. Repeat with the remaining flour and milk.
  • Transfer the cake mix to the prepared cake tin, and give it a couple of taps on the kitchen counter to knock out any air bubbles.
  • Bake for 50-60 minutes, check by inserting a skewer. If it comes out clean, it's ready.
  • After letting the cake sit for a few minutes, turn out onto a rack to cool completely before icing.
  • Scoop out the Bee Creamy Honey & Ginger into a bowl and add the room temperature butter. Whisk with an electric mixer until light and fluffy.
  • Spread over the cooled cake and top with chopped walnuts.
