Fruit & Nut Chocolate Bark with Honeycomb Pieces
This irresistible chocolate bark combines smooth dark chocolate with crispy homemade honeycomb, roasted almonds, pistachios, and sweet sultanas. A dash of salt enhances the flavour, creating a perfect balance of sweet, salty, and crunchy in every bite.
Ingredients
Homemade Honeycomb
- 100 g caster sugar
- 100 g Bee Warm Grey Box Honey
- 2 tsp bicarbonate soda
- 250 g unsalted butter
Chocolate Bark
- 2 tbsp unsalted roasted almonds (chopped)
- 2 tbsp pistachios (chopped)
- 180 g dark chocolate
- 1 tsp flaky sea salt
- 2 tbsp honeycomb (broken into small pieces)
- 2 tbsp sultanas
Instructions
Homemade Honeycomb
- Line a 24cm x 32cm deep tray with baking paper.
- Heat the sugar and honey in a saucepan over low heat until dissolved. Increase to a moderate heat and cook until it turns a golden caramel colour. This won’t take long but is essential to ensure any moisture in the honey has evaporated, ensuring a crunchy honeycomb.
- Remove from heat, stir in bicarbonate soda (it will expand and foam), and immediately pour into the tray. Let set for 1–1.5 hours to harden.
Chocolate Bark
- In a microwave-safe bowl, melt the dark chocolate in 30-second bursts, stirring after each interval, until smooth.
- Line a baking tray with baking paper. Pour the melted chocolate onto the parchment paper, spreading it evenly with a spatula to form a thin layer.
- Sprinkle the chopped almonds, pistachios, sultanas, honeycomb pieces, and flaky sea salt evenly over the chocolate.
- Place in the refrigerator for 30 minutes or until the chocolate has completely set.
- Once set, break into irregular pieces and enjoy!
