Honey Garlic Salmon with Pearl Couscous and Green Beans
Tender salmon fillets coated in a sticky, caramelised honey and garlic glaze deliver a burst of flavour that melts in your mouth. Perfectly paired with pearl couscous and green beans, this is a recipe you'll crave every week.
Ingredients
Salmon & Glaze
- 4 salmon fillets
- 1/3 cup Bold Snow Gum Honey
- 4 garlic cloves (finely minced)
- 2 tbsp soy sauce
- 3 tbsp lemon juice
- 2 tbsp olive oil (or melted butter)
- salt and black pepper
- chilli flakes (optional)
Green Beans
- 200 g green beans
- olive oil
- salt and black pepper
- a squeeze of lemon
Couscous
- 1 cup pearl couscous
- 1 cup boiling water or stock
- 1 tbsp olive oil
- salt
- 1/4 cup parsley (chopped)
- 1 tbsp lemon zest
Instructions
- Preheat the oven to 200°C and line a baking tray with baking paper.
- In a small saucepan, combine the honey, garlic, soy sauce, lemon juice, and olive oil. Cook over medium heat, stirring occasionally, until the glaze thickens slightly and becomes glossy and sticky. Set aside.
- Place the salmon fillets on the prepared tray and season lightly with salt, pepper, and chilli flakes (if using).
- Spoon the glaze generously over each fillet.
- Bake for 12–15 minutes, or until the salmon is just cooked through and starting to caramelise. Halfway through cooking, remove from the oven and baste with more glaze for extra stickiness.
- Bring a medium saucepan of salted water or stock to the boil.
- Add the pearl couscous and cook for 8–10 minutes (or according to packet instructions) until tender. Drain well.
- Stir through the olive oil, chopped parsley, lemon zest, and a pinch of salt.
- Bring a separate pot of salted water to the boil.
- Add the beans and cook for 2–4 minutes, until bright green and just tender. Drain immediately.
- Toss with olive oil, a squeeze of lemon, salt, and pepper.
- Divide the couscous and green beans between plates. Top with the sticky honey garlic salmon and drizzle over any remaining glaze from the tray.
