Honey Jumbles
Just like Grandma used to make… sweet, spiced, and lovingly iced. Kids, big and small, can’t stay away from these sentimental treats that evoke fond memories of charming afternoon teas.

Ingredients
- 1/2 cup Beechworth Honey Traditional Honey
- 75 g butter
- 1 1/2 cups plain flour
- 1 tsp ground ginger
- 1 tsp mixed spice
- 1/2 tsp bicarb soda
- 1 1/2 tbsps milk
- 1 egg
- 1 1/2 cups icing sugar
- Pink food colouring
Instructions
- Sift dry ingredients into a bowl.
- Melt butter and honey in a saucepan over low heat until butter is melted and mixture is smooth. Do not boil.
- Add the honey and butter mixture to dry ingredients along with the milk. Stir until combined. Chill in fridge for 30 minutes.
- Preheat oven to 170 degrees (fan-forced) and line two baking trays with baking paper.
- Once chilled, separate the mixture into 4 equal portions and roll each into a smooth ball. Roll each ball into a long sausage shape. Cut each into four lengths. Form each piece into an oval-shaped ball and flatten slightly. Place each length onto the baking tray. Bake for 12 minutes.
- Leave the biscuits on the tray for 5 minutes to cool and then transfer to a wire cooling rack.
Icing
- Beat egg whites on medium-low speed until frothy, about 1 minute. Gradually add the icing sugar, stirring until the mixture is smooth.
- Spread or dip half of the biscuits in the white icing and place aside to set. Tint the remaining mixture with a few drops of pink food colouring, then spread or drip the remaining biscuits.
- Leave the biscuits to set for 30 minutes, or until the icing is firm.
