Honey & Ricotta Pancakes
These Honey & Ricotta Pancakes are a beloved Goldsworthy family favourite. Irresistibly soft, perfectly fluffy, and destined to become your new weekend ritual. One batter, endless possibilities: fold them into pancake tacos piled high with your favourite fillings, pour them into a tray for a shareable tray bake, or thread bite-sized rounds onto skewers for mini pancake skewers that are as fun to make as they are to eat. However you serve them, a touch of honey is the secret to taking your pancakes to the next level.
Ingredients
- 1 cup ricotta
- 1 1/2 tbsp Traditional Honey
- 1 egg (lightly beaten)
- 1 cup milk
- 1 cup self raising flour
- pinch salt
- 20 g butter (melted)
- Extra honey to serve
Instructions
- Beat ricotta, honey and egg together in a bowl. Stir in milk then sifted flour and salt. Heat a non-stick frying pan and add a little of the butter. Use ¼ cup of batter for each pancake and cook in batches over medium heat for 2 min on each side, until golden.
- Place pancakes on a plate and cover to keep warm. Wipe pan with paper towel between batches, adding remaining butter and cook remaining batter.
- Serve warm pancakes, drizzled with extra Traditional Honey, topped with a dollop of whipped cream or ice cream, and your favourite seasonal fruits.
