Snow Gum Honey comes from the iconic trees found in Victoria’s snow covered High Country. It is pale amber in colour and has woody, eucalypt flavours with notes of roasted hazelnuts. A dry, slightly bitter honey with a strong bitey aftertaste. Very slow to crystallise.

Snow Gums (Eucalyptus pauciflora) are iconic Australia trees that are found in Australian alpine regions. They have beautiful smooth bark and are medium in size. They are the only eucalypt to survive above the snowline.
Snow Gums can tolerate severe frost, snow and summer droughts. They can be found throughout mountain areas along the eastern seaboard and into SA and Tas.
