Southern Blue Gum Honey is pale to medium amber in colour with aromas of a fresh eucalypt forest. It is a bold honey with flavour hints of caramel and mint. It is sweet and then mellows to savoury with a mild aftertaste. It crystallises in a moderate timeframe.
Botanical Information
Southern Blue Gum (Eucalyptus globulus) is a giant tree with long slender leaves nearly as long as your forearm. It grows in rich damp gullies and can grow to 70 metres in height.
The Southern Blue Gum has large cream flowers and gumnuts about the size of a ten cent piece. It flowers in spring.
Geographical Information
Southern Blue Gums can be found in eastern NSW, eastern Vic. and Tas. Unfortunately many of these trees were cut down to make way for pine plantations in north east Victoria before the 1970’s and there are few pockets left that are large enough to collect honey from.
