Homemade Fruit Bread

Hot from the oven! Homemade fruit bread is easier than you might think. Best served fresh on the day of baking, or toasted there after for a crispy crust and doughy centre. The smooth, luscious texture of creamy honey provides a wonderful contrast to the texture of fruit bread, adding a luxurious mouthfeel.

  • 250 ml warm water
  • 1/2 cup dried figs (chopped)
  • 1/2 cup dried apricots (chopped)
  • 1/4 cup currants
  • 1 tbsp Beechworth Honey
  • 1 tbsp allspice
  • 1 1/4 cup baker's flour
  • 1 cup spelt flour
  • 1 tbsp dry yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • Bee Creamy Honey (to serve)


  • Preheat the oven to 200°C.
  • In a medium bowl, place the figs, apricots, currents, olive oil, honey, and allspice and cover with 250ml of warm water.
  • In a separate large bowl, add the baker’s flour, spelt flour, dry yeast, and salt, and lightly mix with a fork.
  • Add the fruit mixture to the flour mixture and use your hands to combine the ingredients. Knead the dough until it is silky, smooth, and no longer sticky.
  • Place the dough into a bowl and cover it with a clean tea towel. Set the bowl aside in a warm location for 1-2 hours to rise.
  • Once the dough has doubled in size, turn it out onto a lightly floured surface and shape into a loaf. Place the dough in a lined loaf tin and leave to rise again for a further 30 minutes before baking.
  • Bake at 200°C for 45 minutes or until it is lightly golden and sounds hollow when tapped on the bottom.
  • Cool the loaf on a wire rack completely before cutting. Best served fresh on the day of baking or toasted thereafter. Add a generous spread of Bee Creamy Honey.
