Homemade Honey Marshmallows

Sweet, fluffy clouds of honey joy, perfect for melting into a mug of hot choccy this winter. Made with 100% Australian Honey for that pure, honey flavour, and totally easy to whip up!

Ingredients

  • 1/2 cup hot water
  • 3 tbsp gelatin
  • 1/2 cup water
  • 1 cup Bee Warm Spotted Gum Honey
  • 1 tbsp vanilla extract
  • Pinch of salt
  • Corn flour

Instructions

  • Line a square baking tin with baking paper. Dust generously with cornflour to prevent sticking.
  • In the bowl of a stand mixer, combine ½ cup of hot water and 3 tablespoons of gelatin. Stir gently to dissolve.
  • In a saucepan over medium heat, combine ½ cup water, 1 cup honey, 1 teaspoon vanilla extract, and a pinch of salt. Stir briefly.
  • Clip on a candy thermometer and heat the mixture to 115°C. Once it reaches temperature, remove from the heat immediately.
  • With the mixer running on medium-high speed, slowly and carefully pour the hot syrup into the gelatin mixture in a steady stream.
  • Continue to beat for 10–15 minutes, or until the mixture becomes thick, glossy, and forms soft peaks.
  • Quickly pour the marshmallow mixture into the prepared tin and spread evenly with a spatula. Let it sit at room temperature for at least 4 hours, or until fully set.
  • Dust the top with cornflour. Slice into squares using a sharp knife. Toss the cut marshmallows in more corn flour to coat all sides to prevent sticking.
  • Keep in an airtight container at room temperature for up to 1 week.
