Ingredients
Cake
- 1½ cups plain flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter (melted)
- ¾ cup honey
- 2 eggs
- 1 tsp vanilla extract
- ¾ cup milk
Topping
- 3 ripe pears
- ¼ cup flaked almonds
- 2 tbsp honey (extra)
- 1 tsp lemon juice
Instructions
- Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm x 30cm baking tray.
- Whisk together flour, baking powder, baking soda and salt.
- In a separate bowl, whisk melted butter, honey, eggs and vanilla until smooth. Stir in the milk.
- Fold wet ingredients into dry ingredients until just combined.
- Pour into the prepared tray and smooth the surface.
- Cut the pears in half, then thinly slice, taking care not to cut all the way through the top if you’d like to keep the slices connected. Gently fan out the slices from the bottom.
- Arrange pears over the batter and scatter with almonds.
- Bake for 30–35 minutes or until golden and cooked through.
- Mix extra honey with lemon juice and drizzle over the warm cake.
- Allow to cool slightly before serving.
