Honey Soy Noodles with Crispy Tofu

Ingredients
Base
- 250 g noodles (egg, rice, or udon)
- 300 g firm tofu (pressed and cut into cubes)
- 1 cup broccoli
- 1 carrot (julienned)
- 2 spring onion (sliced)
- sesame seeds
For the crispy
- 1-2 tbsp cornflour
- salt and pepper (to taste)
- 1 tbsp oil
Honey Sauce
- 3 tbsp soy sauce
- 1/3 cup Bee Bold Apple Box Honey
- 1 tbsp lime juice
- 2 garlic cloves (finely chopped)
- 1 tsp ginger (grated)
- 1 tsp sesame oil
- chilli flakes or sriracha for heat (optional)
Instructions
- Wrap the tofu in paper towel and press to remove excess moisture. Cut into bite-sized cubes.
- Toss the tofu with cornflour, salt, and pepper until evenly coated.
- Heat the oil in a large pan over medium-high heat.
- Add the tofu and cook, turning occasionally, until golden and crispy on all sides. Remove from the pan and set aside.
- Cook the noodles according to packet instructions. Drain well and set aside.
- In a bowl, whisk together the soy sauce, honey, lime juice, garlic, ginger, sesame oil, and chilli (if using).
- Pour into a pan over medium heat and cook briefly until the sauce becomes glossy and slightly thickened.
- Heat a splash of oil in a large pan or wok over high heat.
- Add the broccoli and carrot and stir-fry for 3–4 minutes, until just tender but still crisp.
- Add the cooked noodles and crispy tofu to the pan with the vegetables.
- Pour over the honey sauce and toss everything together until well coated and heated through.
- Serve hot, topped with sliced spring onions, sesame seeds, and extra chilli if desired.
