Blue Gum Honey is white (a special honey colour term) to light amber in colour with a lovely smooth dense texture. It has sweet aromas and flavours of fruity eucalypt. It is a favourite of our co-founder, Jodie Goldsworthy who lathers it on toast for a delicious breakfast. Slow to crystallise.
Botanical Information
Blue Gum (Eucalyptus leucoxylon) is also known as Yellow Gum. It is a small tree (18-25m) and is a popular ornamental shade tree. It can be a favourite tree to grow as a windbreak on farms and is loved by bees and humans for its beautiful nectar rich red flowers. More info: Blue Gum.
Geographical Information
Blue Gums are native to large areas of north central Victoria (where they are called Yellow Gums) and the coastal plains and ranges of South Australia.
