Green Mallee Honey is extra light amber to light amber in colour and captures the dry aromas of summertime in the Australian bush. To taste, Green Mallee Honey is warm with notes of butterscotch and mild eucalyptus. Crystallises within 12 – 18 months, but it won’t last that long. It’s delicious!
Botanical Information
Green Mallee (Eucalyptus viridis) grows in thickets to around ten metres. It is a spindly tree that is very hardy once established and has a high drought tolerance.
Green Mallee is a big honey producer in New South Wales, and it is an important eucalypt used for the distillation of essential oils.

Geographical Information
The Green Mallee is usually found in areas with low rainfall, high summer temperatures and few winter frosts. It can be found in a wide range of soils and grows in eastern QLD, throughout NSW, VIC and eastern SA.
