The outback refers to Australia’s vast landscapes where civilization dwindles, the environment becomes harsher, more remote and the eucalypts even more unique. Gum top box, bimble box, mallee and yupunyah trees, coolibahs and inland ironbarks battle against the elements some of the aridest ancient soils on the planet. Months and sometimes years pass without rain. Honey produced in the outback is eked out by Australia’s inland beekeepers often themselves preferring isolation to civilisation. They are guided by a connection to country and the iconic red soils only truly known by Australia’s indigenous peoples for eons.
